3 easy snack options for the big game!
These three easy snack options to serve for the big game are not only easy to put together but are a great healthy option for any gathering you may have.These flavorful snacks will not only impress your big game crew but will also give you the the satisfaction of serving some health conscience food on the big day.
Olive Oil Guacamole
Ingredients:
6 ripe Avocado's
2-3 limes sliced
1 or 2 Serrano Chillies chopped (stems and seeds removed)
1/2 bunch of Cilantro leaves - finely chopped
1 medium shallot chopped
1 1/2 Tsp sea salt
2 Tsp LOT22 Extra Virgin olive oil (you can also use Garlic,Lemon or Chipotle)
Peel and mash avocado's together adding Cilantro, Shallot and Chillies to taste. Finally add olive oil and sea salt with lime juice to taste. Serve immediately.
Olive Oil Popcorn with Garlic, Rosemary and Sea Salt.
Ingredients
2 Tbsp LOT22 Extra Virgin Olive Oil (You can use Garlic or Truffle for a unique twist)
1/2 cup popcorn kernels
Dried Rosemary
Garlic Powder
Sea Salt to taste
Use a 2.8L pot, pour in olive oil and allow to spread on the whole bottom surface. Add the corn kernels and place the lid slightly open. Place the pot on high heat and allow the kernels to pop. It should take 5 minutes from the time the pot is exposed to heat. At least once throughout the cooking, carefully shake the pot (holding down the lid and then open it slightly again to allow for more space for the kernels to pop. Allow the lid to be open a bit so that steam doesn't build up and so that the popcorn doesn't soak up the extra moisture. Once the piping has stopped (be careful not to burn the popcorn) remove from heat and toss in a bowl with your desired amount of rosemary and garlic powder. Salt to taste.
Charcuterie Grazing Board
Charcuterie boards are great for big gatherings. They are fairly easy to put together, allow your guest to graze while the game is happening and give the appearance that you spent all day putting this masterpiece together. The key is to put a little of something everyone will love. Below is a suggestion of items but by all means adjust as you see fit. There is no rule and ultimately, we know you can make great things!
Ingredients: (serves roughly 12 people)
1 or multiple boards to build on.
Cheeses:
8oz brie cheese
6 oz Manchego cheese cut into slices
8oz triple cream cheese (Bourgogne) or creme fraiche (Costco often carries these)
12 oz fresh mozzarella balls (marinated if possible)
8oz White cheddar or Hard cheddar diced
Meats:
8oz Salami of your choosing, sliced
2 oz prosciutto or turkey sliced
2 oz dried coppa or jerky sticks
Pickled Items:
1/3 cup green olives, pitted
1/3 cup Kalamata olives, pitted
1 cup baby dill pickles or Gerkins
Fruit:
2 cups grapes (your choice) cut into halves
2 cups strawberries or figs sliced in half
1 cup blueberries
1 apple or pear, deseeded and thinly sliced
Spread Condiments:
1/4 cup honey
1/4 cup fruit spread (fig, raspberry or strawberry) use an all fruit spread.
Accompaniments:
1 cup Almonds, Walnuts or Pistachios (or a variety)
3 oz dark chocolate bar broken into bite sized pieces (you could also use gummy bears)
Crackers or Toasts:
4 oz water crackers
4 oz artisan crackers
1 baguette sliced, brushed with LOT22 Olive Oil and baked @ 400F for 6-8 min.
Plate and arrange on your board/boards and let your guests go at it.
